LOST iN’s legendary Supper Club lands in Chicago on November 5, with one of the city’s standout chefs at the helm. California-born Simon Davies worked his way up at the acclaimed Alinea, becoming executive chef in 2018 while the restaurant held three Michelin stars. He later founded ilixr Creative to dream up one-of-a-kind culinary experiences, bringing that same spirit of creativity to Supper Club: An Immersive Dining Experience. But this is no ordinary dinner. Expect DJs, dancers, an open bar and plenty of surprises, all wrapped in a full-on party atmosphere. We caught up with Chef Davies to talk about what’s in store on November 5.
LOST iN: The event is titled Supper Club: An Immersive Dining Experience. What elements of the dinner make it immersive?
Chef Davies: The evening will be full of exciting ingredients and interactive bites, and the chefs and I will be presenting the food throughout. The menu combined with communal seating and family-style dining will create a comfortable yet unique experience.
Li: The dinner will showcase European gastronomy. Will you focus on any particular regions or culinary styles?
SD: Without revealing too much, we are definitely going to focus on the Montaraz Ibérico and Spanish influence beyond just the jamón carving itself. We are also going to incorporate other European flavors and techniques.
Li: Caviar and a jamón carving are listed as dishes that guests can expect. Any other highlights that you can preview?
SD: The dessert course is going to be surprisingly cold.
Li: Did you have a role in creating unique cocktails for the event?
SD: Yes, together with the bar team. We are focusing on seasonal ingredients, and one cocktail will feature a tea from Rare Tea Cellar.
Li: You launched your company in 2021 with the idea of bringing “Michelin-level dining” to private events and parties. Five years later, how has that mission grown and evolved?
SD: That mission still stands strong, but beyond “Michelin-level,” it is about creating an experience for those we cook for and serve that leaves lasting memories. It’s less about the food than the company and celebration. We aim to make our food and service exceptional without taking center stage. As we grow and cater larger events, it’s so rewarding to share in people’s special moments.
